My son got his first on Saturday. Public land in NC PA. 170# sow. Wish we'd had an extraction rig like yours.

Congratulations to your son! I'm told that a sow is better eating, I do most of my own butchering, but in this instance I'm getting my butcher to vacuum pack bear burgers with 25% bacon, and also making some roasts.

I’ve only had a taste of bear meat, don’t know if it was a sow or boar, but it was pretty good.

There are Two Kinds of Black Bear, a Dog Bear and a Hog Bear.

Their Snout will tell you which they are. The Dog Bear has a snout long and pointed like a Collie Dog and the Hog Bear has a short blunt snout like a Hog. From all I've ever heard of them the Hog Bear is a much better eating Bear.

I've had Bear a few times and it has been good to my taste. HOWEVER make sure it is Well Cooked at a high temp to kill off the Trichinosis that they carry. DO NOT cook it on Low in a Crock Pot. Cook on High for an hour or so, then switch over to Low.

I was at a Game Feed one time and the Guest Speaker spoke on this from personal experience. He had eaten Bear done in a Crock Pot at Deer Camp and later got sick. Ended up in Pittsburgh in one of the Hospitals there. The Drs had no idea how to care for him and he kept getting worse--- Until an Old Dr waas walking past his room and overheard the discussion. He stepped in took one look at him and said "you've been eating Beat Meat haven't you?". He had Trichinosis and they had a hard time finding medicine to take care of it, since it has been mostly wiped out by cooking Hog Meat on High.
