I have friends that raise muscovy ducks for the NY live markets, so it's easy for me to get one. Unlike chicken and turkey, they have no white meat, it's all dark meat, and not fatty yet very moist. Roast duck is a nice variation in diet from the normal cuisine found most places, you definitely need to try one.Looks pretty good MM, is that a tame duck ? We had one several years ago and it was delicious ! Don’t know why we haven’t had another.
Last night we had a crock pot recipe over buttered noodles. It wasn’t great, but it was good. Beef stew meat, one can of cream of mushroom soup, one can of French onion soup, one can of cream of celery soup. Next deer I get I think I’ll get some stew meat and try it again. View attachment 29597
Alright, I couldn't find the Uncle Bubba's or whatever meatloaf seasoning, but I found everything else. Elk going in the crockpot tomorrow!Lunch and eventually dinner.
2 lbs cubed venison hind quarter
2 tbs Tony’s seasoning
2 cloves of chopped garlic
1 pkg Cousin Boudreaux’s meatloaf seasoning
1 diced yellow onion
1 diced bell pepper
1 jar of beef gravy
1 can of beef broth
Throw everything into a Dutch oven with lid and place in 275 degree oven for 5 hours. Serve over cooked rice, pasta or potatoes. Enjoy!View attachment 29561
Check direct from the farm sales. We raised grassfed freerange turkeys and my mom took orders and dressed them right away for people. A lot better quality than the store, and that type of buying off the farm is still a common thing around here.My wife says she can’t find duck at any of the grocery stores. Christmas time maybe ?
I’ll bet that will be good !Will report back tonight. I went with 1 T Zataran’s because it’s what I had and I’m trying to cut back on salt. Will season each bowl with more if necessary. Smells great already!
