Is there a reason that some trail cameras have the IR LEDs focus on a spot in the middle of the picture?

I don't think IR LEDs have anything to do with where a camera is focused. Focus is at some distance. Unless something is wrong with the cam, everything in the FOV at that distance should be in focus. How a camera chooses the focal distance is camera dependent.
