It's my family's favorite way to eat deer. They love the pastrami!

A full backstrap brined, rubbed, smoked, and steamed into pastrami sliders. Probably my family's favorite way to eat deer.

Is the flavor significantly different than corned venison? I usually corn a few batches each year but haven’t gone the extra step with the smoker.

I like what the smoke adds to it. Also really like the crust/bark.
