Made stuffed peppers last night. Everything but the sausage and spices came from the garden. Great way to use up some produce.
Ingredients:
Stuffing:
Carrots, leeks, shallots, bell peppers, Jimmy Nardello peppers, tomatoes, microwave rice, a roll of mild breakfast sausage
Spices:
ground cumin, fennel seed, garlic powder, salt and pepper to taste
Topping:
smoked Gouda cheese.
I start by toasting the cumin and fennel seed in a dry skillet on low heat, when you can smell it good I add the sausage. I'm not going to start a fight and name a brand, your favorite mild sausage roll is the right one. When the sausage is browned I add the leeks, carrots, scallions.
When they're sweated good I add the bell pepper and Jimmy Nardello peppers
Then I add microwave rice, I prefer wild rice but only had this on hand
At this point I add the chopped tomatoes which help moisten things.
I stuff the peppers and bake them at 400 degrees until they soften and top them with smoked Gouda cheese for the last couple of minutes.
