From the pig i just caught and cleaned last weekend.
1 lb of Pork Back Strap
Can of Black Beans
Can of Mexican Rotel
1 large sweet onion chopped
1tsp Cayenne Pepper
1tsp of Cumin
2 tbsp Lime juice
4 tbsp Fish House Jerk seasoning
Cilantro Rice
2-1/2 cups of cooked Jasmine Rice
1/2 cup of onion chopper
1/2 cup of Cilantro chopper
1/2 stick of bar
Rub 2 tbsp of Jerk Seasoning on the pork, brown it in olive oil in a fry pan for a few minutes. Pour in the chopped onions into crock-pot, put in the pork make sure to get any oil/jerk/juice from the fry pan. Add in the beans and rotel and mix in the cayenne, cumin and 2 tbsp of jerk seasoning and the lime juice. Make sure the pork is covered. Let it cook all day 8-10hrs on low. I will pull it apart and add it back into the crock-pot when you get home. Heat up the wok and melt the butter and brown the onions a little, add the rice stir so the rice is covered and mix in the onions and add in the cilantro. Have limes, cayenne pepper and cilantro and salsa to side dress the bowls.
I will try to remember to take pictures tomorrow when we eat it for dinner for now here is a boring crock-pot picture.
