I'm smoking a pork butt for the bowl games monday and have some elk steaks for tomorrow. I'm thinking I may have to finish it in the oven because our high is 18 tomorrow.
I couldn’t find a prime rib or brisket to smoke but did find a large chuck roast. I was quite surprised with how it turned out. At a fraction of the cost, it was fantastic! After smoking for 6hrs, wrapped in foil with honey Dr Pepper pulling at about 185. Will definitely do again!
