Had this recipe for many, many years. It's some mighty fine chili that doesn't take long to make. Didn't make it to the farm this weekend so decided to cook chili. Here's the ingredients:
2 lbs of ground pork (If you've never used ground pork you gotta try this. Makes all the difference.
1 box of Carrol Shelby"s Chili Kit (Used to make my own but this is hard to beat and can be found in any grocery store. Contains chili powder mix, cayenne pepper, mesa flour n salt. I don't use the Mesa flour)
Extra chili powder (Add a little if you like a little more chili powder)
Garlic
Can of green chile peppers
1 each red, yellow, green bell pepper. Dice into small pieces.(I cut each in half and freeze the other half.)
1 large yellow onion diced.
1 small can diced tomatoes. (I used about 1/3 of diced tomatoes in pic. It was a 14 oz can)
1 can tomato sauce.
1 can Bush's dark red kidney beans.
1 can Bush's light red kidney beans.
White pepper (Use white pepper instead of black pepper)
1 1/2 bottles of your favorite full bodied beer. Regular Bud is hard to beat.
Brown ground pork in a large pot and sauté onions n peppers in separate skillet.
Add white pepper and salt to taste.
Add chile peppers, onions n bell peppers to browned pork.
Add bout a cup of water and tomato sauce.
Add chili mix and stir.
Add as much diced tomatoes as you like.
Bring to a boil and then add 1 to 1 1/2 bottles of beer.
Bout halfway thru the cook add the kidney beans.
Simmer for as long as you like and enjoy!
I like mine with shredded cheese and sour cream.
