This is probably my favorite non backstrap deer recipe. My city girl wife even likes it.
Into the food processor:
3 Jalapeno peppers
3 Chipotle peppers
1/2 cup apple cider vinegar
1/2 cup chicken stock
1 onion
2 tsp cumin
2 tsp oregano
1 tsp chili powder
1 tsp black pepper
5 cloves of garlic
Flour and brown 2 pounds of meat with some olive oil. I have used it all back ham, neck, shoulder it doesn't matter, leave in fairly large chunks. Place browned meat into the crockpot. Deglaze pan with a cup of chicken stock and pour over the meat. Completely cover with slurry from the food processor. 4-5 hours on low. Shred with a fork and serve in tacos or burritos.
