I don't think you can overcook them. Just keep adding water. The worst ones for me are the ones where they don't remove the big stem in the middle of the leaf. If they are young leaves, it doesn't matter, but the old ones the stem can be tough.Yes, they seemed bitter and overcooked. I'll try them again somewhere else, next time I travel south. Speaking of which, I wish I was there right now, lots of single digits here this week.
