Favorite turkey leg recipe

I’ve kept them for years but this has to be my favorite method of preparing wild turkey leg and thigh meat to date.

I braised the legs and thighs in a Dutch oven at 300F for 4.5 hours. In the pot was one box of chicken broth and a handful of ramps (wild leaks). Onions and garlic would also work.

Pull the meat out, let cool, and remove from the bone. Remove all tendons.

Chop and shred the meat and brown in a skillet with olive oil. Carnitas style. Excellent in a taco or burrito.

It looks really good! We do several things with turkey legs. First, if we are roasting a wild turkey, we remove the legs and put them inside the body cavity and the entire turkey in a cooking bag to hold in moisture. This helps keep the legs from drying out and they cook more evenly. Personally, I like to eat them directly, but the tendons are a real pain in the butt.

One other thing we do is make soup. My wife puts them in the soup stock and lets them stew until the meat comes off easily into the soup.

Your method looks like a good one as well!
