Pear honey

Went to an old home place by the Mississippi River and picked up pears to make pear honey today. It's pretty simple, peal and core then shred 8 cups of pears. I use a food processor for that. Add 8 cups of sugar to your shredded pears and cook on medium heat till its thick, I took 65 minutes on the batch today. Then add 1 cup of crushed pineapple and cook 15 more minutes. Fill pint jars and water bath them 10 minutes.

I make a pear butter similar to apple butter. I add cinnamon, ginger and cardoman to break up the monotone sweetness of the pears. Like it better than apple butter :).
