HAPPY NEW YEAR

Everyone have a great and safe New Year's eve and a prosperous 2025. I'm starting it off similarly.

I'll be semi-retired, so I hope to have more time. Most of the jerky we have made has been ground meat extruded and dried in an Excalibur dehydrator. I ordered a computer cooling fan that is supposed to arrive Friday. I plan to build a 4-sided box and attach the fan to one end. I'll then place it over the smoke outlet form my Smokin Tex 1400. I'm going to try several marinades and use the meat slicer we got to make muscle jerky. For $150 I could buy a Smokin Tex jerky dryer to put on the smoker, but for $30 bucks I'm going to make my own and see how it works.
