Shanks have become sought after parts of the deer in our house. Takes a little more work but low and slow in a Dutch oven or crock pot and you’re left with amazing meat. Lots of options once it’s off the bone and shredded.

Venison shank tacos tonight. Put the shank in a crockpot on high for six hours with chopped onion and beef stock. Shredded then pan fried the meat in a little olive oil to add some crisp. Delicious.

After a few replacements on my sprayer, finally got my plots sprayed. In reality I only sprayed a portion of one plot. Most have enough clover that I’ll just manage the best I can and see how long they’ll last.

Logging has begun. Only 6 loads off so far but sunlight already peaking through. Planning to burn first or second year post logging.
2024 spring burn very productive this year, probably will burn again in 2026.

They’re still planting that crap on roadways in NC. There’s some in my county, so far nothing on us but as I open the canopy and burn I’m keeping a look out. Multi flora rose and barberry are the two noticeable invasives we have.

The last few summers I’ve been wearing Sitka equinox guard pants. They come in a solid color. Lightweight and the factory permethrin treated clothes are good for 80 washes. For a shirt I’ll wear a long sleeve underarmor or similar sun shirt or just a T-shirt.
