traditional venison chops - hand cut. Worth the effort in my opinion. Not always wanting to spend the time on them when we get a deer or two and time to package is limited - but very glad when I do.
sometimes Ieave the tallow on sometimes not. I'm good if it cooks away and not into the meat - like on a grill.
