My fathers venison chili

Making some chili for the firehouse guys for tomorrow's lunch. Figured I would share. The recipe as he wrote it below. I mix my venison grind with a pork butt, also very important to trim the scraps. Get rid of the fat and silver skin.

Onions with olive oil til transparent




Just follow the instructions and season to taste with some chili oil
 
John...That recipe is almost identical to the recipe I used for a long time till I got lazy. Started using Carroll's chili mix as a substitute but nothing better than adding all the ingredients yourself. That looks fantastic. Hopefully, we'll gain more chili recipes as time goes by.
 
Mine is very similar except I add kidney beans to it and I never thought about adding corn flour to thicken it a bit. Will try that this weekend.
