so my neighbor just got back from hunting and he broke it down himself(real sloppily i might add) and he gave me his trimmings. Ive already gone through and salvaged the large portions. I managed to salvage 9 full ounces! Now I am left with a massive bag of trimmings that i just dont have the heart to toss to my dogs. is there anything i can do with this? does anybody know any recipes? theres a lot of silverskin and fat in there, but as you can see there is also a large amount of meat.trimmings.jpg

If I had 50 pounds of it and wanted sausage I would have it made into sausage.

If I had 50 ponds of it and didn't want sausage I would grind it.

Looks might be deceiving but that doesn't look like a massive bag in the picture. Trimmings are good just to fry and eat.

I am super late on this, but that is a perfect candidate for slow cooking. I would toss that in a small dutch oven with 1 cup of red wine, 1 cup of broth (beef, chicken, or maybe even venison), half an onion sliced, 2 whole cloves of garlic, one sprig of thyme, salt and pepper. Cook at 300 for 2 hours. Add a tablespoon of butter to the sauce when finished and serve over mashed potatoes. You won't even know the silver skin was there... It won't be a huge portion, but it should be dang good!
