What's for dinner???

dang lak! Didn't know a southern boy could prepare catfish any other way than fried. Nice!!!
Ha. Now FRIED is mighty good. This recipe from Crowne Restaurant in Mississppi bakes the catfish in a mixture of butter, mayo, parmesan cheese, and green onion. Can't go wrong with that!
 
I’m glad you asked! Down south, when the weather warms up it’s gonna be pork or chicken. Arrived at the farm bout 1:30 today and decided on a couple of slabs of baby backs on the Traeger.

Stopped by our new home build in the adjoining county where we are from and snapped a couple of pics of framing progress.

This location is a mile from Brooks and his family in one direction and a mile from Ashli and her family in other direction. 56 acres with a nice fishing pond and plenty of room to roam when I retire.

Had the ribs rolling in smoke for 3 hrs. Gonna let em go for another hr n wrap em. Meantime...gonna enjoy this adult beverage on a glorious day down here.

After 3.5 hrs of bathing in smoke at 200 degrees, bathed em in secret sauce n back on smoker set to 275.

It’s been a while since I had Friday nite slaw dawg nite. Took care of that tonite.

Yum. I'm cooking dogs on the grill Sunday for my 200th Bday!!! Minus you pickles. Have you ever put just enough beer to cover a skillet and cooked dogs until browned like a grill?? Then place in oven for 5 min on bun covered in mozzarella cheese. Remove and Garnish as want . MMMmm
 
After snow 4 days this week, the sun came out and I felt the traeger needed firing up. Found a cheap packer brisket at Wally World last night so I got up at 6am and got started. Simple prep: remove excess fat, kosher salt and fresh ground pepper rub and on the smoker. After 61/2 hours at 225, I wrapped it with mandarin orange juice and a little bbq sauce I threw it back on for 3hrs. Pulled when the flat was 203 and the point was 195. Served with green beans, smashed spuds and sourdough toast. For a cheap piece of meat, it ate really well. On a habitat front, everything these days is pretty much on auto pilot. Got plenty of ladino n Durana clover that deer will feast on thru summer. For the first time ever we have a bumper crop of pears coming along.
