Always considered myself as somewhat of a cornbread connesuer. Recently found out there’s better than mine...and easier to make.

Here’s the recipe:
1 cup self rising corn meal
1 cup cream corn
1 cup sour cream
1 stick of butter
3 eggs
Optional diced jalapeños

Combine all ingredients except butter in a mixing bowl.
Melt butter in a skillet and once melted, combine with other ingredients.
Preheat skillet in 350 degree oven
Spray skillet with coconut oil spray or any oil spray.
Pour ingredients in skillet and bake for 50 min at 350.

Enjoy! And, it’s just as good the next day. Made a big ol pot of pinto beans and slaw but got carried away and didn’t take pic of beans n slaw.

Wayne - Better yet...bring those bone chasing k9's down for a shed hunt and I'll serve you a slice or 2 along with pinto's, slaw and some kind of side meat. Might even do biscuits n gravy the following morning. :D
 
TripleC, Your enthusiasm for corn bread has got my attention; I've probably never had it made from other than a box mix, will try out your recipe and see what I've been missing. Thanks for posting it.
 
I used your recipe and made a batch for the wife to take to her weekly ladies get-together at church. The women there flipped out over it. I did omit the optional jalapeno's though and added about 1/4 cup of diced Spanish onions instead. Now they all want the recipe. We are negotiating the price. :) Several of them have recipes I've been trying to get for years.
