What's for dinner???

Had a turkey on the ground by 6:45am yesterday. Brined it for 24hrs, seasoned with traegers poultry 2447505C-4227-40C2-856D-927F416716A6.jpeg rub and smoked until probe read 140. Wrapped in foil with butter, brown sugar and a lil black cherry soda. Cooked until 168 and let it rest for 45 minutes. Was as moist and tasty as any smoked turkey I’ve ever had. The legs/thighs/wings will make soup this week.
 
Wild turkey on the grill, at least 5 minutes per side, the lighter half marinated 24 hrs in Italian seasoning, darker half marinated in soy sauce & garlic seasoning.

My favorite Magic Marinade
½ cup soy sauce
⅓ cup oil
1 tablespoon brown sugar
1 tablespoon oregano
1 tsp parsley flakes
1 tsp fresh ginger
2 minced garlic gloves
3 lbs turkey breast cut to pcs the size of chicken breast
Mix and pour over meat. Marinade in ziploc bag for 24 hrs or more. You can also freeze it in the bag for later.

You never disappoint!
Just wish I was as good at chasing deer as I am at cooking. Anytime the grandkids are down at the farm for a spend-the-nighter, biscuits gotta be on the menu. Tried to throw em a curve a couple of weekends ago and go with pancakes but the lil' one demanded biscuits.

Mennoniteman...Arguably the best tasting wild game on the planet. I'll have to give your marinade a try. Love me some Italian dressing as a marinade on anything with wings. Ain't bad on ribs either.

I haven’t been able to find a brisket in a while so smoked a 3.5lb chuck roast. I rubbed it down with Traeger beef rub and smoked for 4 hours. I wrapped in foiled with juice and bbq sauce and pulled it at 195. Flavor was outstanding (10/10), but it was a little drier/tougher than a good brisket. I think next go around, l’ll try brining to increase the moisture. Served it up with hot biscuits and cottage cheese/pears. I spent Saturday working dawn to dusk on the farm so I figured I better put all the calories I burnt off back in the furnace to help me fight off the Rona. Put some baby backs on the egg with some apple smoke then sauced them up on the grill. Made a fine lazy Sunday meal

Now you know me likes my Mexican foods. I’m not vegetarian but these are.
Cut up onion,paplono, chives. Cook together in olive oil 5 min. Add black beans , squirt of lime in to the skillet , cook another 5. Cook/ mash remaining beans w scoop of butter in another pot , salt and pepper everything well. Roll and fry in olive oil for 1 min/side, top w guacamole, sour cream , garnish. Yum.

Celebrated youngest grandson’s birthday this past Saturday. Lil feller loves him some ribs so I loaded him up. 2 racks of baby backs and a rack of rib roast beef ribs. Everybody left happy, happy, happy.

Added a youth model side-by-side .410 to the celebration. It will be a few years until he’s ready to handle it but wanted to get him something he will look back on 40 years from now and think of Pops.
